snack time

(Thank you to everyone who commented and e-mailed suggestions for helping Anna. I also got some great pointers from those lovely folks over at the Ravelry forums. I'll be sure to let you know how the repairs go!)

Today, we bring you Sophia's new favorite snack. Quick, easy, healthy and the kids all love it.



Toasted Kale Chips

~ One bunch Lacinato Kale (also called Dinosaur kale)
~ Olive oil
~ Salt

Preheat the oven to 350. Rinse the kale, shaking off excess water. Tear the leaves away from the stems, breaking them into large pieces (they will cook down quite a bit). Spread in a layer on a parchment covered baking sheet. Drizzle with oil and toss to coat. Sprinkle with salt.



Bake on the lowest rack in your oven, stirring after ten minutes, then checking and stirring every 3 minutes after. Cooking time varies depending on how moist the kale is. When all the pieces are dry and crispy, it's ready to be enjoyed!
